What is a sweet potato?
Sweet potato (Ipomoea batatas) is a dicotyledonous plant that belongs to the bindweed or morning glory family, Convolvulaceae. It has large, starchy, tuberous roots with a sweet taste. Some also eat the young leaves and shoots. The sweet potato is only distantly related to the common potato and does not belong to the nightshades family.
The plant is a green perennial. The edible tuberous root is long, with a smooth skin, the color of which varies between yellow, orange, red, brown, purple and beige. Sweet potato flesh ranges from beige to white, red, pink, purple, yellow, orange and crimson. Sweet potato varieties with white or pale yellow flesh are less sweet and less juicy than those with red, pink or orange flesh.
