It is used by Opinel of high quality. It boasts high corrosion resistance and high mechanical performance. The blade offers sharpness and high resistance to abrasion (wear). It can also be used to cut hard materials such as ceramics, but then it needs to be resharpened. The advantage of stainless steel is that it does not require special maintenance under normal conditions of use, unlike carbon steel. However, it can reach its limits when it is in prolonged contact with an aggressive environment (acid, salt water, detergent...).
